Our food
Here at herbstreet we are doing everything we can to minimise our carbon footprint and provide food and drink that is as sustainable as possible for our environment.
All the fish on the menu is, as much as possible, locally caught in Irish waters and from plentiful and replenishable stocks, our table water is chilled and charcoal filtered in-house and FREE and our wines are all from Europe to cut down on transportation costs from the new world.
Our restaurant
The main space in the restaurant is lit by 109 LEDS using only 1 watt of energy each, which is approximately the same power as a 100 watt light bulb! We have also incorporated then into a tubular lighting system made from recycled conduit.
Our chairs are a vintage design by Harry Bertoia from 1956 and we chose them for our restaurant instead of buying new chairs that would clutter a landfill in a couple of years.We even chose hand dryers for the wash rooms that use half the normal power and dry your hands in 20 seconds, thus eliminating washroom waste.
